Art versus Science in the Field of Maturation with Distillery Ambassador Kevin Pigott.
Take a deep dive into the science of maturation whilst learning to appreciate the unknown and intangible aspects of maturation that remain to be fully understood. This masterclass will focus on the impact of the wood character and how it evolves the initial distillate character that comes from the cereal grain. This will lead us into a deconstructed tasting of our triple blend. Our session will showcase the complex flavour compounds derived from certain wood types in varying quantities along with a discussion on our limited human understanding of forests, trees and fundamentally oak. Whiskeys to be tasted include the Single Malt, Grain and Pot Still from various cask types showcasing a flavour wheel that represents all styles of whiskey made in Ireland...plus the Tullamore D.E.W XO Caribbean Rum Cask and an interesting pot still cask sample from our distillery that is truly remarkable aka our secret and final whiskey of the evening. Guests will also enjoy a signature pre-batched old fashioned cocktail on arrival.
